Smoothie recipes I love series: Chia Mango Kale

  • 1.5 cup kale leaves
  • 1/2 cup mango pulp ( I keep this frozen in ice trays. Helps me be spontaneous.)
  • 1/4 of orange juice
  • 1/2 cup ice cubes
  • 2 teaspoons maple syrup
  • 2 teaspoons chia seeds
  • 6-8 leaves mint

Blend, blend, blend (serves 2)

This is such a great pairing for the sunny side ups, omelettes or even a humble salad brunch! I have been trying to come up with ways to use up my supply of kale, so this is certainly not going to be the last recipe I am using it in. I have been on a mission to camouflage this bitter tasting, but beneficial ingredient in creative ways ( aren’t we all? ) for the past few weeks and I am absolutely killing it. I am very pleased with this delicious and healthy way to feel the tropical vibe. I don’t know anyone who is a fan of Kale, but this recipe is sure to make you wanna slurp it all summer long. You are also likely to trick your kids into drinking it. Just serve it in colourful slurpee cups πŸ˜‰
